Actually, I like that red station wagon type thing from the first Mad Max movie. I also like the cop car from the Blues Brothers. Magnum PI's loaner Ferrari wouldn't be bad either. I'd also accept the pickup truck from Simon & Simon. The Little Burro (Ford Bronco) from "Romancing the Stone" would offer some top-down, go anywhere driving fun. If Burt Reynolds were to deliver it, I'd take is Trans-Am from Cannon Ball Run. Perhaps the original Kitt would make a good choice, so I wouldn't have to drive and endanger the youths of tomorrow. Certainly something from a late '70s or early '80s TV/Cinema would satisfy me.
